🄬 True Food Kitchen–Inspired Kale Caesar (Low Carb)

This is inspired by the famous kale Caesar from True Food Kitchen — lemony, garlicky, and umami-rich — but made low carb by skipping the breadcrumbs. You still get that craveable Caesar flavor thanks to anchovies, Parmesan, and a perfectly balanced dressing.

Salad Ingredients

  • 1 large bunch lacinato (Tuscan) kale, stems removed & chopped
  • Freshly grated Parmesan cheese (generous amount)
  • Fresh cracked black pepper

(Optional add-ins: grilled chicken, shrimp, or salmon)

Caesar Dressing Ingredients (No Breadcrumbs)

  • 2 anchovy fillets (or 1–1½ tsp anchovy paste)
  • 1 clove garlic
  • Zest of ½ lemon
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • 1 egg yolk (or 2 tbsp mayo if preferred)
  • ½ cup extra virgin olive oil
  • ¼ cup finely grated Parmesan
  • Salt & black pepper, to taste

Instructions

1. Make the Dressing

  • Finely mince anchovies and garlic into a paste (or use a small food processor).
  • Whisk in lemon zest, lemon juice, Dijon, and egg yolk (or mayo).
  • Slowly drizzle in olive oil while whisking until emulsified and creamy.
  • Stir in Parmesan, then season with black pepper and salt if needed (anchovies add salt!).

2. Prep the Kale (this is KEY)

  • Place chopped kale in a large bowl.
  • Add a small pinch of salt and massage with clean hands for 1–2 minutes until darker, softer, and silky.

3. Toss & Finish

  • Add dressing gradually and toss to coat (you may not need it all).
  • Finish with lots of freshly grated Parmesan and cracked black pepper.

Why This Still Works Without Breadcrumbs

  • Anchovies + Parmesan = deep umami
  • Lemon + garlic = brightness
  • Massaged kale gives texture so you don’t miss the crunch

šŸ’” Optional low-carb crunch ideas (True Food–approved vibes):

  • Shaved Parmesan curls
  • Toasted pine nuts (small amount)
  • Crispy prosciutto shards
