This croissant bar was our New Year’s Day brunch — simple, indulgent, and exactly the kind of slow, comforting start we love after a long night of celebrating. Buttery croissants, creamy soft-scrambled eggs made with heavy cream, savory sausage and crispy bacon, layered cheeses, and fresh arugula all laid out for everyone to build their perfect bite.

It’s effortless hosting at its best: nothing fancy to assemble, but everything feels special. Guests can keep it classic with egg and cheese, go savory with sausage and Swiss, or add a fresh pop of greens for balance.   • 12–16 mini croissants or 6–8 large croissants, sliced horizontally

  • ¼–⅓ cup heavy cream
  • 2 tablespoons butter
  • Salt & pepper, to taste

  • Swiss cheese slices
  • Cheddar or American cheese slices
    (Gruyère also works beautifully)

Greens

  • Fresh arugula

Spreads & Toppings

  • Softened butter
  • Fruit jam or preserves
  • Honey or hot honey (optional)
  • Dijon or grainy mustard (optional)

  1. Whisk eggs with heavy cream, salt, and pepper
  2. Melt butter in a nonstick skillet over low heat
  3. Add eggs and stir gently with a spatula
  4. Cook slowly until just set but still glossy
  5. Remove from heat immediately — they’ll finish cooking off the heat
