🌷🫐 Blueberry Cream Cheese French Toast Bake 🐣💗

A soft, custardy French toast bake layered with sweet cream cheese and juicy blueberries, topped with a buttery crumble and baked to golden perfection—an easy, make-ahead Easter brunch favorite.

🛒 Ingredients

For the casserole:

  • 1 loaf French bread (or brioche), cut into cubes
  • 8 oz cream cheese, cubed
  • 1 cup fresh blueberries (or frozen)
  • 8 large eggs
  • 2 cups milk
  • ½ cup heavy cream
  • ¾ cup sugar
  • 1 tbsp vanilla extract
  • 1 tsp cinnamon

For the topping (optional but SO good):

  • ½ cup brown sugar
  • ½ cup flour
  • ½ tsp cinnamon
  • ¼ cup butter, cold + cubed

👩‍🍳 Instructions

1. Assemble

  • Grease a 9×13 baking dish
  • Add half the bread cubes
  • Sprinkle cream cheese + blueberries
  • Top with remaining bread

2. Make Custard

  • Whisk: eggs, milk, cream, sugar, vanilla, cinnamon
  • Pour evenly over the casserole

👉 Gently press bread so it soaks it all up


3. Chill (Important!)

  • Cover and refrigerate at least 4 hours or overnight

4. Add Topping

  • Mix brown sugar, flour, cinnamon
  • Cut in butter until crumbly
  • Sprinkle over top before baking

5. Bake

  • Bake at 350°F for 45–50 minutes
  • Center should be set, top golden

🍓 Serve With

  • Powdered sugar
  • Maple syrup
  • Extra blueberries

Notes

  • Use brioche if you can → softer, richer
  • Add lemon zest to the custard for a fresh spring flavor 🍋
  • If using frozen blueberries, don’t thaw (prevents bleeding color)
