Game Day Breakfast Burritos (Soft + Cozy Edition)

Ingredients

  • 8 –10 burrito-size flour tortillas
  • 12 eggs
  • 1 tablespoon butter
  • 1 full pack sausage links browned and sliced
  • 1.5 –2 cups shredded cheddar cheese
  • Salt + pepper to taste
  • Optional: foil for wrapping to keep warm

Method

  1. Brown the sausage links in a skillet until they’re golden on all sides. Remove from the pan, slice, and set aside.
  2. In the same skillet, melt the butter and scramble all 12 eggs. Season with salt and pepper.
  3. When the eggs are almost set, add the sliced sausage back into the pan.
  4. Sprinkle cheddar cheese over the mixture and let it melt into the eggs and sausage.
  5. Warm the tortillas until soft and easy to roll.
  6. Spoon the egg-sausage-cheese filling into each tortilla and wrap tightly: fold in the sides, then roll from the bottom.
  7. Optional: Wrap each burrito in foil to keep them warm until serving.
