๐Ÿฅฌ๐Ÿ’š Kale Me Crazy Asian Bowls

A fast, healthy, cozy dinner made with savory ground pork, wilted kale, and fragrant jasmine rice. Perfect for busy weeknights!

Ingredients

For the Bowl

  • 1.5 lb ground pork
  • 1โ€“2 bunches fresh kale, chopped (curly kale shown in photo)
  • 4 green onions, sliced
  • Jasmine rice (about 1โ€“2 cups uncooked)

Sauces & Seasonings

  • 2 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tsp Maggi seasoning (optional but so good)
  • 1 tbsp ginger paste (or fresh grated ginger)
  • Salt & black pepper to taste
  • 1 tbsp olive oil (or any oil)

Directions

1. Cook the Jasmine Rice

  1. Rinse 1โ€“2 cups jasmine rice until water runs clear.
  2. Cook according to package directions (usually 1 cup rice + 1 ยฝ cups water).
  3. Fluff and set aside.

2. Prep & Cook the Kale

  1. Wash kale and remove thick stems.
  2. Chop into bite-sized pieces.
  3. Boil or steam for 3โ€“4 minutes until bright green and tender.
  4. Drain and set aside.

3. Cook the Pork

  1. Heat 1 tbsp oil in a large skillet.
  2. Add ground pork and break it apart with a spoon.
  3. Add ginger paste and cook until pork is lightly browned.
  4. Stir in:
    • Soy sauce
    • Fish sauce
    • Maggi seasoning (optional)
    • Salt & pepper
  5. Add sliced green onions and cook 1โ€“2 more minutes.

4. Build the Bowls

  1. Add a scoop of warm jasmine rice to each bowl.
  2. Top with the savory ground pork mixture.
  3. Add a generous handful of steamed kale.
  4. Finish with extra green onions if you like.
