🥬🍋 Lemon Parmesan Asparagus

Bright, tender asparagus roasted with lemon, garlic, and finished with shaved Parmesan — a fresh, elegant side that perfectly balances your rich Easter menu.


Ingredients

  • 1 lb fresh asparagus, trimmed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • ¼ cup shaved or grated Parmesan cheese

Instructions

1️⃣ Prep oven

Preheat oven to 400°F

Line a baking sheet with parchment paper.


2️⃣ Season

On the baking sheet, toss asparagus with:

  • olive oil
  • garlic
  • salt
  • pepper

Spread into a single layer.


3️⃣ Roast

Roast for 12–15 minutes
until tender with slightly crispy tips.


4️⃣ Finish

Remove from oven and add:

  • lemon juice
  • lemon zest
  • Parmesan cheese

Toss lightly.


5️⃣ Serve

Serve immediately for best texture and flavor.

Notes

⭐ Don’t overcook — asparagus should still have a slight bite
⭐ Use shaved Parmesan for a more elegant look
⭐ Add a drizzle of olive oil or squeeze of lemon right before serving
