Ingredients
- 1½ lbs tri-color (rainbow) carrots, peeled
- 2 tbsp olive oil
- 2 tbsp butter, melted
- 2 tbsp honey
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- 1–2 tbsp fresh dill, chopped
- 1 tsp lemon zest (optional but recommended)
Instructions
1️⃣ Prep oven
Preheat oven to 400°F
Line a baking sheet with parchment paper.
2️⃣ Season
In a bowl, toss carrots with:
- olive oil
- melted butter
- honey
- garlic
- salt & pepper
3️⃣ Roast
Spread carrots on baking sheet in a single layer.
Roast for 20–25 minutes, turning halfway through,
until tender and slightly caramelized.
4️⃣ Finish
Remove from oven and toss with:
- fresh dill
- lemon zest
5️⃣ Serve
Transfer to a serving dish and finish with:
- a light drizzle of honey (optional)
- flaky sea salt
