🥕🌿 Honey Butter Rainbow Carrots with Dill

Sweet, tender tri-color carrots roasted in a rich honey butter glaze and finished with fresh dill — a bright, buttery side that adds the perfect touch of spring to your Easter table.

Ingredients

  • 1½ lbs tri-color (rainbow) carrots, peeled
  • 2 tbsp olive oil
  • 2 tbsp butter, melted
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1–2 tbsp fresh dill, chopped
  • 1 tsp lemon zest (optional but recommended)

Instructions

1️⃣ Prep oven

Preheat oven to 400°F
Line a baking sheet with parchment paper.


2️⃣ Season

In a bowl, toss carrots with:

  • olive oil
  • melted butter
  • honey
  • garlic
  • salt & pepper

3️⃣ Roast

Spread carrots on baking sheet in a single layer.

Roast for 20–25 minutes, turning halfway through,
until tender and slightly caramelized.


4️⃣ Finish

Remove from oven and toss with:

  • fresh dill
  • lemon zest

5️⃣ Serve

Transfer to a serving dish and finish with:

  • a light drizzle of honey (optional)
  • flaky sea salt

Notes

⭐ Use whole carrots with a bit of stem for a prettier presentation
⭐ Let edges caramelize slightly — that’s where the flavor is
⭐ Add dill at the end so it stays fresh and vibrant
