🍓🥬 Strawberry Romaine Salad with Poppyseed Dressing

Crisp romaine layered with sweet strawberries, creamy cheese, and crunchy candied pecans, tossed in a light poppyseed dressing — a fresh, vibrant salad that perfectly balances your Easter dinner.



Ingredients

Salad

  • 2–3 heads romaine lettuce, chopped
  • 1½ cups fresh strawberries, sliced
  • ½ cup crumbled goat cheese (or feta if preferred)
  • ½ cup candied pecans
  • ¼ cup thinly sliced red onion

Poppyseed Dressing

  • ⅓ cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tsp poppy seeds
  • pinch salt & pepper

Instructions

1️⃣ Make dressing

Whisk together:

  • olive oil
  • apple cider vinegar
  • honey
  • Dijon
  • poppy seeds
  • salt & pepper

2️⃣ Assemble salad

In a large bowl combine:

  • romaine
  • strawberries
  • red onion
  • candied pecans

3️⃣ Finish

Top with:

  • goat cheese
  • drizzle dressing just before serving
  • cracked black pepper

Notes

⭐ Dress the salad right before serving so it stays crisp
⭐ Use cold, crisp romaine for best texture
⭐ Add cheese last so it doesn’t get overly coated
