The secret is soaking the potatoes and coating them lightly with cornstarch before baking, which creates a perfectly golden, crispy exterior with a fluffy center. Ingredients
  

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • For Finishing
  • truffle salt
  • grated parmesan cheese
  • dried parsley

Method
 

  1. Cut the Potatoes
  2. Slice the russet potatoes into thick steak fry wedges.
  3. Soak the Potatoes
  4. Place the potatoes in a bowl of cold water and soak for 30 minutes.
  5. This removes excess starch and helps the fries become extra crispy.
  6. Dry Completely
  7. Drain the potatoes and dry them very well with paper towels or a kitchen towel.
  8. Season
  9. Place the potatoes in a large bowl and toss with:
  10. olive oil
  11. cornstarch
  12. garlic powder
  13. onion powder
  14. salt
  15. black pepper
  16. smoked paprika
  17. Mix until evenly coated.
  18. Bake
  19. Preheat oven to 425°F.
  20. Spread fries on a parchment-lined baking sheet in a single layer.
  21. Bake for 20 minutes.
  22. Flip
  23. Flip the fries and bake another 15 minutes until golden and crispy.
  24. Finish
  25. While hot, sprinkle with:

  28. dried parsley
  29. Serve immediately.
