❄️ Snow Day Tomato Soup ☃️

A warm, cozy bowl of comfort made on a snow day when school was canceled and everyone stayed home. This Snow Day Tomato Soup is creamy, simple, and made for dipping grilled cheese while watching the snow fall.

🧾 Ingredients

  • 2 tablespoons butter or olive oil
  • 1 small onion, diced
  • 2–3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 2 cups tomato juice (or chicken/vegetable broth)
  • ½ cup heavy cream (adjust to taste)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of sugar (only if tomatoes are acidic)

🍲 Instructions

  1. In a large pot over medium heat, melt butter or warm olive oil.
  2. Add diced onion and cook until soft and translucent, about 4–5 minutes.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add crushed tomatoes and tomato juice. Stir well and bring to a gentle simmer.
  5. Simmer uncovered for 15–20 minutes, stirring occasionally.
  6. Use an immersion blender (or carefully transfer to a blender) and blend until smooth.
  7. Stir in heavy cream and season with salt and pepper to taste.
  8. Add a pinch of sugar only if needed. Heat gently — do not boil.

❄️ Notes

  • Garnish with dried dill before serving.
  • Perfect with grilled cheese on a cozy snow day.
  • Add an extra splash of cream before serving for an extra-cozy finish.
