This Sunshine Breakfast Board is one of my favorite ways to start the day when everyone is home and hungry. It’s colorful, fresh, and packed with a mix of protein, fruit, and bright flavors that feel like a slow morning on vacation.
The board starts with crispy bacon and fluffy scrambled eggs with spinach, paired with slices of favorite toasted bread and creamy avocado. Fresh strawberries and orange slices add natural sweetness, while yogurt topped with crunchy granola makes the perfect creamy bite. A simple pepper salad made with sweet peppers, red onion, and Garlic Expressions dressing brings a little zing and color to the board.
For extra flavor, we love adding a few favorite sauces on the side like Yucatán hot sauce, Doc Ford’s sauce, or a bright verde hot sauce. Lime wedges are scattered across the board for a fresh squeeze over fruit or yogurt.
It’s the kind of breakfast that invites everyone to gather around, build their own plate, and enjoy a bright, relaxed start to the day.

Ingredients
Protein & Eggs
- 1 lb bacon
- 6–8 eggs
- 1 cup fresh spinach
Bread & Avocado
- 4–6 slices favorite toast, toasted
- 2 avocados, sliced
Fruit & Yogurt
- 1–2 cups strawberries
- 1–2 oranges, sliced
- 1–2 cups yogurt
- ½ cup granola
Pepper Salad
- 3 bell peppers, sliced
- ¼ red onion, thinly sliced
- 2–3 tbsp Garlic Expressions dressing
Garnish
- Lime wedges
Optional Sauces
- Yucatán hot sauce
- Verde hot sauce
Cook the Bacon
Cook bacon in a skillet or bake on a sheet pan at 400°F for about 15–18 minutes until crispy. Set aside.
2. Make the Eggs
In a bowl, whisk 6–8 eggs with a splash of milk, salt, and pepper until well combined. Sauté spinach in olive oil until just wilted, then pour in the egg mixture and gently scramble until soft and fluffy.
3. Prepare the Pepper Salad
In a small bowl combine sliced peppers and red onion. Toss with Garlic Expressions dressing.
4. Toast the Bread
Toast slices of your favorite bread until golden.
5. Assemble the Board
Place small bowls of yogurt and granola on a large board or platter. Arrange the bacon, scrambled eggs with spinach, toast, and sliced avocado around the board.
Fill in the remaining space with strawberries, orange slices, and the pepper salad.
6. Add Garnishes
Scatter lime wedges across the board and serve with your favorite sauces like Yucatán hot sauce, Doc Ford’s sauce, or a verde hot sauce.
Serving Tip
